Chili! 

Yesterday, I made chili. Some of you will remember the great chili fiasco of last year, in which I tried to create a signature chili recipe and all went horribly awry. 
Not so last night! I made chili and good times were had by all: 
 chili, quality time with my SO, watching Elf and Justice League and a dessert of coconut flour brownies and sugar free ice cream. 
Chili: 

Place 1 tbs olive oil in a large stock pot. Add 1/2 onion, diced, and 3 cloves garlic, smashed

1 lb ground chuck + 1 pound ground bison (brown separately and add to stock pot) 

Add to stock pot:

1 large can diced tomatoes, with the juice

1 can tomato paste

1/2 can tomato sauce

2 cans dark red kidney beans (drained and rinsed)

1 can light red kidney beans (drained and rinsed)

1 can cannellini beans (drained and rinsed) 

1 can diced green chilies

1 tbs peanut butter

1/2 bottle of Sierra Nevada IPA

1/2 cup water

Salt and pepper to taste

A few dashes Cholula hot sauce

Stir all ingredients together, and simmer over very low heat for 3 hours, stirring occasionally. 

Enjoy! Try it with shredded smoked cheddar, chopped green onions, and a little sour cream.
